The Simple Women's Daybook!



Outside my window.... Sunny, warm, and beautiful! :)


I am thinking.... Only 3 more days til the New Year... where did the time go??

I am thankful for.... a wonderful Christmas!


From the kitchen.... Food... any suggestions for dinner??


I am wearing..... My jean skirt, and a t-shirt.... and bare feet


I am reading.... The Tale of Despereaux, the kids got it for Christmas.. Hunter and I have been reading it together.... fantastic book, we have such a hard time putting the book down!


I am hoping.... things are finally turning around and looking up!



I am creating... more scrapbook pages, but not as much pressure now!



I am hearing.... hunter talking.... the girls are still sleeping can you believe that???


Around the house.... is clam, happy, and content!


One of my favorite things.... smiles on my children!



A few plans for the rest of the week..... Library, resting, crafts, coloring with my kids, reading, laughing, playing, and just living life and having fun!

I love the photo. I have really great memories of Desperaux. It was the first chapter book I ever read aloud to Ben. I think I liked it better than he did. ;-) This was a few year ago btw....LOL

I can't believe the year is over! I feel like I was just couting down the days till I turned 50 in Feb, now 50s almost gone, and I'm heading to 51!

I'm making Chicken Baseballs... it was shared by someone on my Weight Watcher Yahoo Group... everyone who has made them say their kids LOVED them! Time will tell!
Chicken Baseballs
4 servings
6 points per serving

3 oz. light cream cheese, softened
2 tsp light margarine, melted
1/4 tsp salt
1/4 tsp pepper
2 Tbsp chopped onion
2 cups cubed, cooked chicken
1 8oz. can reduced fat crescent rolls
Bread Crumbs

In a blender (or by hand) combine cream cheese, butter, salt, pepper, milk, and onion. Blend.

Pour mixture over cooked chicken and stir.

Separate crescent roll dought into four rectangles and seal perforations.

Spoon 1/2 cup of the mixture into center of each.

Pull opposite corners of dought to center and seal - sprinkle each "baseball" with bread crumbs and place on ungreased cookie sheet.

Bake at 350 degrees for 20 minutes
